- 1 kg Chickpeas canned
- 3 EL Ghee * or coconut oil if vegan
- 2 Bay leaf*
- 2 TL Caraway seed whole
- 1 TL fennel seeds*
- 2 onions
- 4 garlic
- ½ Jalapenos
- 1 fresh ginger about the size of a thumb
- 1 TL Garam Masala *
- 1 TL Cumin* ground
- 1 TL ground coriander*
- ½ TL chili powder
- 1 TL dried fenugreek leaves * Optional
- ½ TL Turmeric powder *
- 400 g Canned tomatoes * in cubes
- 1 ½ TL Salt*
- 1 TL Honey* or sugar

Instructions
- Peel and roughly chop the onions and garlic.
- Peel ginger and finely grate.
- De-seed and finely chop the jalapenos.
- In a large Dutch oven over medium-high heat, melt the ghee and add the whole bay leaves, cumin seeds, and fennel seeds and stir-fry for XNUMX to XNUMX minutes until fragrant.
- Add onions and fry until golden. Reduce the heat as you do this, as you want to caramelize the onions to add a nice sweetness.
- Add minced garlic, ginger and diced jalapenos. Fry for about 2-3 minutes.
- Now add all the other spices. (Garam Masala, Ground Cumin, Coriander, Chili Powder, Fenugreek, Turmeric.
- Stir once and stir in the canned tomatoes.
- Add chickpeas and bring to a boil. Add a little water if needed to completely cover the chickpeas. Cover and cook over low heat for 10 minutes. Season with salt.
- If it tastes bitter or has too much acid in the tomatoes, add a little sugar or honey to balance it out.
- Taste again and serve.
